It’s the innovation farm of Café UBA, run by third-generation grower Julio César Madrid alongside Julio Andrés Quiceno. New fermentation methods are developed and tested here before they’re used across UBA’s other farms.\u003c\/p\u003e\n\u003cp dir=\"ltr\"\u003eThis lot uses UBA’s Culturing process, “Logan”. The coffee is fermented for 120 hours under controlled conditions with selected yeast cultures and a mix of pineapple, blackberry and sugarcane. It’s then washed and dried in three stages over 20 days.
